Ingredients
  

  • 1 lb ground pork or ground turkey
  • 4 cups coleslaw mix Shredded cabbage and carrots.
  • 3 pieces green onions Chopped.
  • 2 cloves garlic Minced.
  • 1 tablespoon fresh ginger Minced.
  • 3 tablespoons soy sauce or tamari For gluten-free option.
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper
  • hot sauce Optional for serving.

Instructions
 

  • Heat the olive oil in a large skillet or wok over medium heat.
  • Add the ground pork (or turkey) to the skillet. Cook, breaking it apart with a spatula, until it is browned and cooked through, about 5-7 minutes.
  • Stir in the minced garlic and ginger. Cook for an additional 1-2 minutes until fragrant.
  • Add the coleslaw mix to the skillet. Stir until the vegetables are well combined with the meat and begin to soften, about 3-4 minutes.
  • Pour in the soy sauce and sesame oil. Mix well and continue to cook for another 2-3 minutes. Season with salt and pepper to taste.
  • Remove from heat and stir in the chopped green onions.
  • Serve hot, optionally with hot sauce on the side.

Notes

Feel free to customize the recipe by adding other vegetables such as bell peppers or snap peas.
This dish can be prepared in advance and stored in the refrigerator for up to 3 days.
To make it extra low-carb, omit any high-carb sauces and ensure the coleslaw mix is primarily cabbage.
