Mix chili powder, black pepper, salt, and baking soda. Toss chicken cubes to coat.
Add whisked egg and stir to coat chicken evenly.
Sprinkle corn starch and flour over chicken, mix for thick coating.
Marinate for 10 minutes while heating oil.
Fry chicken in batches 5-6 minutes until golden brown. Drain on paper towels.
Heat oil in pan. Add cumin seeds, garlic, green chilies, and red chilies. Sauté 2 minutes.
Deglaze with water. Add garlic paste, ginger paste, and curry leaves. Sauté until aromatic.
Add chili garlic sauce, yogurt, and salt. Simmer 4-5 min to reduce and concentrate flavor.
Pour in colored water and simmer 2 more minutes.
Add chicken, toss to coat, and simmer 1-2 minutes. Serve hot.

Air fryer instructions included for healthier version. Use mild green chilies or less chili powder to adjust spice. Store leftovers up to 4 days or freeze for meal prep.
