  • 1 ⅓ cup uncooked rice this is gonna soak up all the tasty bits.
  • 2 teaspoons butter adds a nice richness to the dish.
  • 1 tablespoon olive oil helps to cook your veggies and sausage without sticking.
  • 1 yellow onion diced; oh that sweet savory base flavor you gotta have.
  • 1 smoked sausage sliced in half moons; brings the smoky, meaty punch.
  • 1 large green bell pepper diced; adds a little crunch and fresh flavor.
  • 2 teaspoons minced garlic you gotta have your garlic, really seals the deal.
  • 1 tablespoon cumin and ½ teaspoon oregano; those earthy spices make everything sing.
  • 2 cans Black Chili Beans with sauce plus 1 can regular Black Beans, rinsed and drained, and 1 can fire roasted tomatoes; these packs flavor and body for the dish.

  • Start by melting that butter and olive oil in your pressure cooker pot over medium heat. This combo gets the base rich and ready for the rest of the flavors.
  • Add the diced onion and cook it till it’s soft and smells so dang good, about 5 minutes or till it’s translucent.
  • In goes the smoked sausage. Cook it until it’s browned and releasing that smoky aroma, should take about 5 minutes.
  • Next toss in your green bell pepper and minced garlic. Stir and cook for 2 minutes until you catch the garlic scent filling your kitchen.
  • Sprinkle in your cumin and oregano. Stir everything well so the spices coat the sausage and veggies evenly.
  • Add the uncooked rice. Stir so it gets toasted just a bit, about 1-2 minutes. This little step amps up the flavor big time.
  • Pour in the Black Chili Beans and their sauce with the regular black beans and fire roasted tomatoes. Ladle in enough water to cover the rice and beans, making sure nothing’s dry.
  • Lock your lid on that pressure cooker, set it to high pressure, and cook for 20 minutes. Once done, do a natural release to let the pressure drop slowly, so your rice gets that perfect tender pull. Then you’re ready to dig in!

Notes
