  • 1 muffin tin
  • 1 muffin liners or non-stick spray
  • 1 measuring cups and spoons

Ingredients
  

  • 2.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 2.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter Melted and slightly cooled.
  • 1 cup milk Whole or any milk of choice.
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped pistachios Plus extra for topping.
  • few drops green food coloring Optional for color.

Instructions
 

  • Preheat your oven to 375°F (190°C). Line a muffin tin with muffin liners or spray with non-stick spray.
  • In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
  • In another bowl, mix the melted butter, milk, eggs, and vanilla extract together until well blended.
  • Pour the wet ingredients into the dry ingredients and stir gently with a rubber spatula just until combined. Be careful not to over-mix.
  • Fold in the chopped pistachios gently into the batter.
  • Evenly distribute the batter into the prepared muffin tin, filling each cup about ¾ full. Sprinkle the tops with additional chopped pistachios if desired.
  • Bake in the preheated oven for 20-22 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  • Remove the muffins from the oven and allow them to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

Store the muffins in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
For an extra touch, you can drizzle some melted chocolate over the cooled muffins or serve with a side of butter or cream cheese spread.
You can substitute other nuts if desired, but make sure to adjust portions according to preference.
