  • 6 hard-boiled eggs peeled and halved
  • 3 tablespoons mayonnaise creamy is king here
  • 1 tablespoon chile garlic sauce such as Sambal Oelek
  • 1 tablespoon finely chopped cilantro plus extra for garnish
  • 0.5 lime juiced
  • Kosher salt to taste
  • 3 slices crispy-cooked bacon chopped
  • 0.5 avocado diced
  • 1 scallion chopped, dark green for topping

  • First thing you gotta do is cut your hard-boiled eggs in half lengthwise. Scoop out those yolks and drop ’em into a mixing bowl. You notice how smooth and bright those yolks look, don’t you?
  • Next, mash the yolks with the mayo, chile garlic sauce, chopped cilantro, lime juice, and a pinch of salt. You wanna get it real smooth and creamy so it fills easier.
  • Now, split your yolk mix into three bowls to make your three versions. For the bacon batch, stir in your chopped crispy bacon. That crunch is gonna bring a whole new level.
  • For the avocado version, fold in the diced avocado gently so it stays chunky and fresh.
  • Now grab your egg whites ready and start filling ‘em up. Spoon the bacon yolk mix into some whites and top with a little chopped cilantro for that fresh pop.
  • Then fill the others with the avocado mixture. Maybe add some more cilantro or scallion for a bit of green sparkle.
  • For the last batch, keep it simple with just the basic yolk mix. Garnish with thinly sliced chives and sprinkle a little black pepper. It’s simple but dang tasty.
  • Serve ‘em up on a nice plate and watch those smiles happen fast. You gotta admit, this is a heck of a way to dress up eggs!
