Equipment

  • 1 wooden spoon or spatula
  • 1 measuring cups
  • 1 measuring spoons

Ingredients
  

  • 1 pound smoked sausage, sliced Can substitute with turkey sausage or chicken sausage.
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon salt Adjust to taste.
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • to taste fresh parsley for garnish Optional.

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned, about 5 minutes. Stir occasionally.
  • Add the chopped onion, bell pepper, and minced garlic to the skillet. Sauté for another 5 minutes until the vegetables are softened.
  • Stir in the rice, and cook for 2 minutes, allowing it to absorb the flavors.
  • Pour in the chicken broth, diced tomatoes (with their juice), paprika, oregano, salt, and black pepper. Stir everything together.
  • Bring the mixture to a boil, then reduce heat to low. Cover the skillet with a lid and simmer for about 20 minutes, or until the rice is cooked and has absorbed most of the liquid.
  • Remove from heat and let it sit covered for another 5 minutes. Fluff with a fork before serving.
  • Garnish with fresh parsley if desired and serve hot.

Notes

You can substitute the smoked sausage with turkey sausage or chicken sausage for a lighter option.
Feel free to add in vegetables like peas, corn, or diced carrots for added nutrition.
This dish can be easily doubled to serve more people. Just adjust the amount of all ingredients accordingly.
