Season chicken breasts with salt and pepper generously on both sides.
Place the seasoned chicken in the bottom of your slow cooker or pressure cooker in an even layer.
In a bowl, whisk together honey, soy sauce, ketchup, olive oil, garlic, onion, and red pepper flakes.
Pour the sauce mixture over the chicken, making sure each piece is well coated.
Seal the pressure cooker lid and cook on high pressure for about 25 minutes. Alternatively, cook in a slow cooker on low for 6-7 hours or high for 3-4 hours.
When cooking is complete, allow natural release of pressure for maximum tenderness.
Shred the chicken with two forks, return to the pot and stir to absorb the sauce. Serve warm over rice or vegetables.
Notes
For extra thickness, add a cornstarch slurry at the end. Store leftovers up to 4 days in the fridge or freeze for 3 months.
