  • 2 lb boneless skinless chicken breasts fresh or thawed
  • salt and pepper to taste
  • 1 cup honey
  • 1 cup low sodium soy sauce
  • 0.5 cup ketchup
  • 4 tablespoons olive oil
  • 2 cloves garlic minced, or 1 teaspoon minced garlic in oil
  • 0.5 cup onion diced
  • 0.5 teaspoon red pepper flakes

  • Season chicken breasts with salt and pepper generously on both sides.
  • Place the seasoned chicken in the bottom of your slow cooker or pressure cooker in an even layer.
  • In a bowl, whisk together honey, soy sauce, ketchup, olive oil, garlic, onion, and red pepper flakes.
  • Pour the sauce mixture over the chicken, making sure each piece is well coated.
  • Seal the pressure cooker lid and cook on high pressure for about 25 minutes. Alternatively, cook in a slow cooker on low for 6-7 hours or high for 3-4 hours.
  • When cooking is complete, allow natural release of pressure for maximum tenderness.
  • Shred the chicken with two forks, return to the pot and stir to absorb the sauce. Serve warm over rice or vegetables.

Notes

For extra thickness, add a cornstarch slurry at the end. Store leftovers up to 4 days in the fridge or freeze for 3 months.
