  • 1 pound ground beef moderately lean
  • 1 green bell pepper sliced thin
  • 1 onion sliced
  • 3 cloves garlic minced
  • 2 cups beef broth low or no sodium
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 19 ounces frozen cheese tortellini thawed
  • ½ cup heavy cream
  • 8 ounces shredded mozzarella or cheese blend

  • Brown the ground beef in a skillet over medium heat, then drain excess fat.
  • Add green bell pepper, onion, and minced garlic. Cook for 5 minutes until soft.
  • Stir in beef broth, Worcestershire sauce, salt, and pepper. Bring to a simmer.
  • Transfer everything to a slow cooker. Add thawed tortellini and mix gently.
  • Cook on low for 3-4 hours until tender. In last 30 minutes, stir in heavy cream and half the cheese.
  • Top with remaining cheese, cover, and cook until melted. Serve hot.

Notes

For a twist, try swapping ground beef for shaved steak or garnish with red pepper flakes for a kick.
