Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the honey, soy sauce, minced garlic, grated ginger, black pepper, and salt. Mix well to create the marinade.
Add the bite-sized salmon pieces to the marinade, making sure to coat them evenly. Let them marinate for about 5 minutes.
Heat the olive oil in a small saucepan over medium heat. Once hot, add the marinated salmon pieces, reserving the leftover marinade. Sear the salmon for 2-3 minutes on each side until crispy.
Transfer the seared salmon to the prepared baking sheet and drizzle the reserved marinade over the top.
Bake in the preheated oven for 8-10 minutes, or until the salmon is cooked through and the edges are crispy.
Remove from the oven and let rest for a few minutes. Garnish with chopped green onions before serving.
For added crunch, you can toss the salmon bites in panko breadcrumbs before searing.
Serve these salmon bites with steamed rice or vegetables for a complete meal.
