  • 1 tablespoon olive oil
  • 1 pound potato gnocchi
  • 2 cloves garlic minced
  • 5 ounces fresh spinach
  • ¼ teaspoon red pepper flakes
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup feta cheese crumbled

  • Heat olive oil in a large skillet or use the sauté function on your pressure cooker over medium heat.
  • Add the potato gnocchi and cook for 8-10 minutes, stirring frequently until golden and crispy on all sides.
  • Stir in minced garlic and cook for about 1 minute until fragrant.
  • Add the fresh spinach and cook for 2-3 minutes until wilted but still bright green.
  • Season with red pepper flakes, salt, and black pepper. Stir well to distribute evenly.
  • Remove from heat and sprinkle crumbled feta over the warm gnocchi. Serve immediately.

Notes

Leftovers can be stored in the fridge for 3-4 days or frozen for up to a month. Reheat using sauté mode or microwave in short bursts to keep crisp. Add sun-dried tomatoes or olives for extra flavors right before serving.
