Preheat your oven to 400°F. Line a baking dish with foil and lightly grease it.
Crush butter crackers and mix with salt, pepper, garlic powder, and dried parsley in a shallow dish.
In a separate bowl, mix milk and beaten eggs.
Spread shredded cheddar cheese into a third dish.
Dip each chicken piece into egg mixture, then coat with cheese, and finally press into cracker mixture.
Place coated chicken pieces into the baking dish. Spray tops with cooking spray or butter.
Bake for 25–30 minutes until chicken is cooked through and crust is crisp and golden.
While baking, mix soup, sour cream, butter, and milk in a saucepan to create sauce. Serve over chicken.
Notes
To reheat and keep the crust crispy, warm leftovers in a 350°F oven for about 10 minutes instead of using the microwave.
