In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for 5 minutes, or until softened and translucent.
Stir in the minced garlic, diced carrot, and diced celery. Sauté for another 5 minutes until the vegetables are tender.
Add the can of diced tomatoes (with their juice), vegetable broth, white beans, coconut milk, dried thyme, and dried basil to the pot. Stir well to combine.
Bring the mixture to a boil, then reduce heat to low. Cover the pot and let simmer for 20 minutes, stirring occasionally.
Season the stew with salt and pepper to taste. If you prefer a creamier texture, use an immersion blender to blend a portion of the stew, or transfer a cup to a blender and blend until smooth, then return it to the pot.
Serve hot, garnished with fresh parsley if desired.
