  • 1 tablespoon olive oil
  • 30 grams butter about 2 tablespoons
  • 0.5 onion finely chopped, sweet onion preferred
  • 3 cloves garlic finely diced
  • 0.5 teaspoon black pepper freshly ground
  • 70 grams tomato paste about ¼ cup
  • 0.75 cup cream heavy or whipping cream
  • 40 grams parmesan finely grated
  • 1 tablespoon lemon juice freshly squeezed
  • salt to taste
  • 200 grams dried pasta or 300g fresh pasta

  • Heat olive oil and butter in a pressure cooker over medium heat until butter is melted and smooth.
  • Add finely chopped onion and sauté for 5–6 minutes until soft and translucent.
  • Add diced garlic and cook for 1–2 minutes until fragrant.
  • Stir in black pepper and tomato paste. Cook for 2–3 minutes to deepen flavor.
  • Pour in cream and stir until combined, keeping the heat low to gently simmer.
  • Mix in grated parmesan and stir until melted and smooth.
  • Add lemon juice and salt to taste. Stir to blend and simmer gently for 5–10 minutes.
  • Cook pasta separately according to package instructions and reserve a splash of pasta water.
  • Toss cooked pasta into sauce with a splash of pasta water. Stir and simmer for a minute or two until sauce clings to pasta.

Notes

Best served hot, garnished with extra parmesan, basil, or cracked pepper. Store leftovers in an airtight container up to 3 days.
