Heat olive oil and butter in a pressure cooker over medium heat until butter is melted and smooth.
Add finely chopped onion and sauté for 5–6 minutes until soft and translucent.
Add diced garlic and cook for 1–2 minutes until fragrant.
Stir in black pepper and tomato paste. Cook for 2–3 minutes to deepen flavor.
Pour in cream and stir until combined, keeping the heat low to gently simmer.
Mix in grated parmesan and stir until melted and smooth.
Add lemon juice and salt to taste. Stir to blend and simmer gently for 5–10 minutes.
Cook pasta separately according to package instructions and reserve a splash of pasta water.
Toss cooked pasta into sauce with a splash of pasta water. Stir and simmer for a minute or two until sauce clings to pasta.
Notes
Best served hot, garnished with extra parmesan, basil, or cracked pepper. Store leftovers in an airtight container up to 3 days.
