Cook the penne pasta according to package directions until al dente. Drain and set aside.
In a large skillet over medium heat, melt the butter slowly.
Add the minced garlic and stir for about 1 minute until fragrant.
Pour in the heavy cream and bring it to a simmer. Stir in pepperoncini juice (if using), red pepper flakes, garlic salt, and season with salt and pepper.
Lower heat and gradually stir in pepper jack and parmesan cheeses until fully melted and smooth.
Add cooked pasta into the sauce and stir gently to coat evenly.
