  • 2 chicken breasts cut in half lengthwise
  • Salt & pepper to taste
  • ½ teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 3 cloves garlic minced
  • ½ cup chicken broth or dry white wine
  • 1 cup heavy or whipping cream
  • ½ cup parmesan cheese freshly grated
  • 1 tablespoon fresh parsley chopped

  • Cut the chicken in half lengthwise so you have 4 thinner pieces. Season with salt, pepper, and garlic powder on both sides.
  • Heat olive oil in the pressure cooker insert using the sauté setting. Cook chicken 4-5 minutes per side until golden brown. Remove and set aside.
  • Melt butter in the insert, then sprinkle in flour and whisk for 1-2 minutes to form a roux.
  • Add minced garlic and cook for 1 minute until fragrant.
  • Slowly whisk in chicken broth or wine and simmer 2-3 minutes until slightly thickened.
  • Reduce heat and stir in cream and parmesan until smooth and melted.
  • Return chicken to pot, spoon sauce over, and simmer for 5 minutes.
  • Sprinkle fresh parsley on top before serving.

Notes

Use freshly grated parmesan for best texture. Reheat leftovers gently to avoid sauce separation.
