Season the chicken breasts with salt and pepper on both sides.
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and cook for about 5-6 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set it aside.
In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute, until fragrant, being careful not to burn it.
Pour in the chicken broth and scrape any browned bits from the bottom of the skillet. Bring to a simmer and let it cook for 2-3 minutes.
Stir in the heavy cream and dried Italian herbs, mixing well. Let the sauce simmer for another 3-5 minutes, allowing it to thicken slightly.
Add the grated Parmesan cheese to the sauce and stir until melted and well combined.
Return the cooked chicken to the skillet and coat it in the creamy garlic sauce. Cook for an additional 2 minutes to heat through.
Serve hot, garnished with fresh parsley.
