Ingredients
  

  • 4 pieces boneless, skinless chicken breasts About 1.5 lbs total.
  • to taste salt
  • to taste pepper
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream Can use half and half for a lower calorie option.
  • 1 teaspoon dried Italian herbs Can substitute with thyme, oregano, and basil.
  • ½ cup grated Parmesan cheese
  • fresh parsley For garnish.

Instructions
 

  • Season the chicken breasts with salt and pepper on both sides.
  • In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and cook for about 5-6 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set it aside.
  • In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute, until fragrant, being careful not to burn it.
  • Pour in the chicken broth and scrape any browned bits from the bottom of the skillet. Bring to a simmer and let it cook for 2-3 minutes.
  • Stir in the heavy cream and dried Italian herbs, mixing well. Let the sauce simmer for another 3-5 minutes, allowing it to thicken slightly.
  • Add the grated Parmesan cheese to the sauce and stir until melted and well combined.
  • Return the cooked chicken to the skillet and coat it in the creamy garlic sauce. Cook for an additional 2 minutes to heat through.
  • Serve hot, garnished with fresh parsley.

Notes

For a lower calorie option, you can use half and half instead of heavy cream.
This dish goes great with a side of steamed vegetables or over rice or pasta.
You can adjust the level of garlic to suit your preference or add a pinch of red pepper flakes for a little heat.
