- 1 tablespoon unsalted butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 medium carrot, diced
- 1 stalk celery, diced
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 4 cups seafood stock
- 1 cup heavy cream
- 1 pound crab meat, picked over for shells Can replace with lobster or any preferred seafood.
- 1 pound shrimp, peeled and deveined

- 1 juice of lemon
- chopped fresh parsley for garnish
Heat the olive oil and butter in a large pot over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for about 5 minutes until the vegetables are soft.
Stir in the dried thyme and smoked paprika, cooking for another minute until fragrant.
Pour in the seafood stock and bring to a simmer. Allow it to simmer for about 15 minutes.
If you desire a smoother bisque, use a blender to puree the soup until smooth. Return the mixture to the pot.
Stir in the heavy cream and let it heat through for about 5 minutes. Do not let it boil.
Add the crab meat and shrimp. Cook for an additional 5-7 minutes until the shrimp is opaque and cooked through.
Season with salt, pepper, and lemon juice to taste.
Serve hot, garnished with chopped parsley.
You can replace crab meat with lobster or any preferred seafood.
If you want a spicier kick, consider adding a pinch of cayenne pepper.
