This one-pan creamy chicken and gnocchi dish blends juicy golden chicken, soft pillow-like gnocchi, and a rich garlic-Parmesan sauce for the ultimate cozy dinner.
Mix your flour, salt, pepper, paprika, and garlic powder in a bowl. Toss your chicken cubes in that mix until coated.
Heat olive oil in pressure cooker skillet or large pan over medium heat. Add chicken, cook 6–8 minutes till golden. Remove and set aside.
Melt butter in the same pan, then add minced garlic. Sauté for 1–2 minutes until fragrant.
Pour in the chicken broth, deglaze the pan by scraping browned bits. Let simmer briefly.
Stir in heavy cream and simmer 3–4 minutes to thicken.
Add Parmesan cheese, oregano, thyme, and red pepper flakes. Stir until smooth.
Return chicken to skillet along with sun dried tomatoes and gnocchi. Stir to coat. Seal and pressure cook until gnocchi is soft. Use natural release.
