  • 2 large chicken breasts sliced into cubes
  • ½ cup flour
  • ½ tsp each salt, pepper, paprika, garlic powder
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons minced garlic
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated
  • ½ tsp each oregano, thyme, red pepper flakes
  • cup sun dried tomatoes chopped
  • 1 pack gnocchi

  • Mix your flour, salt, pepper, paprika, and garlic powder in a bowl. Toss your chicken cubes in that mix until coated.
  • Heat olive oil in pressure cooker skillet or large pan over medium heat. Add chicken, cook 6–8 minutes till golden. Remove and set aside.
  • Melt butter in the same pan, then add minced garlic. Sauté for 1–2 minutes until fragrant.
  • Pour in the chicken broth, deglaze the pan by scraping browned bits. Let simmer briefly.
  • Stir in heavy cream and simmer 3–4 minutes to thicken.
  • Add Parmesan cheese, oregano, thyme, and red pepper flakes. Stir until smooth.
  • Return chicken to skillet along with sun dried tomatoes and gnocchi. Stir to coat. Seal and pressure cook until gnocchi is soft. Use natural release.

Notes

Refrigerate leftovers in airtight containers for up to 3 days. Reheat with a splash of broth to maintain creaminess. Freezes well for make-ahead meals.
