  • 12 oz spaghetti your choice of type
  • 1 lb chicken breast or thighs cut into bite-size pieces
  • 1 tablespoon olive oil or vegetable oil
  • 1 medium yellow onion chopped
  • 1-2 cups bell peppers chopped
  • 4-5 cloves garlic minced
  • 1 tablespoon + 1 tsp Cajun or Creole seasoning
  • 1 teaspoon garlic powder
  • 2 teaspoon smoked paprika divided
  • 1.5 tablespoon flour
  • 0.5 cup chicken broth or stock
  • 1.5 cups heavy cream
  • 0.5 cup Parmesan cheese grated
  • 1 teaspoon onion powder
  • Red pepper flakes, extra Parmesan, green onions for garnish (optional)

Instructions

  • Cook spaghetti in salted water according to package. Drain and set aside.
  • Heat oil in skillet, season chicken with Cajun seasoning, garlic powder and half smoked paprika. Cook until golden and fully cooked, then set aside.
  • In the same skillet, cook chopped onions and bell peppers for 4-5 minutes. Add garlic and cook another minute.
  • Sprinkle flour over veggies, cook for 1 minute to remove raw taste.
  • Slowly whisk in the cream and chicken broth, simmer until it starts to thicken.
  • Add remaining Cajun seasoning and smoked paprika, simmer 3-4 minutes.
  • Stir in Parmesan until creamy and melted. Return chicken to skillet and coat with sauce.
  • Add pasta to sauce, stir to combine. Heat through and garnish if desired.

Notes

Optional garnishes include red pepper flakes, green onions, and extra Parmesan. Recipe stores well in fridge for 3-4 days, or freeze for later.
