Cook spaghetti in salted water according to package. Drain and set aside.
Heat oil in skillet, season chicken with Cajun seasoning, garlic powder and half smoked paprika. Cook until golden and fully cooked, then set aside.
In the same skillet, cook chopped onions and bell peppers for 4-5 minutes. Add garlic and cook another minute.
Sprinkle flour over veggies, cook for 1 minute to remove raw taste.
Slowly whisk in the cream and chicken broth, simmer until it starts to thicken.
Add remaining Cajun seasoning and smoked paprika, simmer 3-4 minutes.
Stir in Parmesan until creamy and melted. Return chicken to skillet and coat with sauce.
Add pasta to sauce, stir to combine. Heat through and garnish if desired.
Notes
Optional garnishes include red pepper flakes, green onions, and extra Parmesan. Recipe stores well in fridge for 3-4 days, or freeze for later.
