  • 10.5 ounces Pasta penne or fusilli
  • 1 tablespoon Olive oil
  • 1 pound Sausages pork or beef, with spices
  • 1 large Shallot finely chopped
  • 1 Pointed red pepper sliced thin
  • 2 cloves Garlic smashed and finely chopped
  • ½ tablespoon Dried oregano
  • 3 tablespoons Cajun seasoning
  • 2 tablespoons Tomato paste
  • ½ cup Low-fat cream cheese
  • cup Grated Parmesan to sprinkle
  • 2 to 3 tablespoons Fresh parsley chopped, for garnish
  • Salt and black pepper to taste

  • Cook the pasta till it's just al dente according to package instructions. Drain and set aside.
  • Heat up olive oil in a large skillet over medium heat. Brown the sausages until cooked through. Remove from heat and slice into bite-sized pieces.
  • In the same skillet, add chopped shallot, red pepper, and garlic. Sauté until soft.
  • Stir in oregano, Cajun seasoning, and tomato paste until everything is mixed.
  • Add cream cheese and stir until melted and creamy. Return sausage slices to skillet and mix.
  • Toss the skillet contents with the cooked pasta until each piece is coated with sauce.
  • Transfer to pressure cooker pot. Add enough water or broth to cover the pasta base. Seal and check float valve, then cook under high pressure for about 4 minutes.
  • Use slow release after cooking to finish gently.

Notes

Serve topped with more grated Parmesan and fresh parsley. Perfect for a quick, flavorful dinner!
