Cook the pasta till it's just al dente according to package instructions. Drain and set aside.
Heat up olive oil in a large skillet over medium heat. Brown the sausages until cooked through. Remove from heat and slice into bite-sized pieces.
In the same skillet, add chopped shallot, red pepper, and garlic. Sauté until soft.
Stir in oregano, Cajun seasoning, and tomato paste until everything is mixed.
Add cream cheese and stir until melted and creamy. Return sausage slices to skillet and mix.
Toss the skillet contents with the cooked pasta until each piece is coated with sauce.
Transfer to pressure cooker pot. Add enough water or broth to cover the pasta base. Seal and check float valve, then cook under high pressure for about 4 minutes.
Use slow release after cooking to finish gently.
Notes
Serve topped with more grated Parmesan and fresh parsley. Perfect for a quick, flavorful dinner!
