Equipment

  • 1 large pot
  • 1 colander
  • 1 large skillet
  • 1 wooden spoon
  • 1 measuring cups and spoons
  • 4 serving plates

Ingredients

  • 12 oz pasta (penne or fettuccine)
  • 6 oz bacon, cut into small pieces
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  • In a large skillet over medium heat, add the olive oil. Once heated, add the bacon pieces and cook until crispy, about 5-7 minutes.
  • Add the minced garlic to the skillet with the bacon and sauté for an additional 1-2 minutes until fragrant.
  • Pour in the heavy cream and stir to combine. Allow the sauce to simmer for 3-4 minutes until it begins to thicken.
  • Reduce the heat to low and gradually stir in the grated Parmesan cheese until melted and well incorporated. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  • Season the sauce with salt and black pepper to taste.
  • Add the drained pasta to the skillet, tossing to coat the pasta evenly with the creamy bacon sauce.
  • Serve immediately, garnished with freshly chopped parsley.

Notes

For added flavor, consider adding sautéed mushrooms or peas to the dish.
This recipe can easily be doubled for larger gatherings.
Make sure not to overcook the pasta; it should still have a slight bite to it.
