1 mixing bowl
1 spatula
1 plastic wrap
1 knife
1 cutting board
- 8 oz cream cheese softened
- 4 oz feta cheese crumbled
- ½ cup dried cranberries chopped
- ¼ cup walnuts chopped (optional)
- 4 large flour tortillas
- ¼ cup fresh parsley or spinach chopped (for garnish)
In a mixing bowl, combine the softened cream cheese and crumbled feta cheese. Use a spoon or spatula to mix until smooth and creamy.
Stir in the chopped dried cranberries and walnuts (if using) into the cream cheese mixture until evenly distributed.
Lay one tortilla flat on a cutting board. Spread about ¼ of the cream cheese mixture evenly over the entire surface of the tortilla.
Roll the tortilla tightly, starting from one edge, into a log shape. Wrap the rolled tortilla in plastic wrap and repeat the process for the remaining tortillas.
Once all tortillas are rolled and wrapped, refrigerate them for at least 30 minutes to firm up.
After chilling, remove the pinwheels from plastic wrap and place them on a cutting board. Using a sharp knife, slice each rolled tortilla into 1-inch wide pinwheels.
Arrange the pinwheels on a platter and garnish with fresh parsley or spinach before serving.
For a colorful presentation, you can use flavored tortillas, such as spinach or sun-dried tomato.
These pinwheels can be made a day in advance; just store them in the refrigerator until ready to serve.
Feel free to customize the recipe by adding other ingredients like roasted red peppers or olives for different flavor profiles.
