Equipment

  • 1 mixing bowl
  • 1 spatula
  • 1 plastic wrap
  • 1 knife
  • 1 cutting board

Ingredients

  • 8 oz cream cheese softened
  • 4 oz feta cheese crumbled
  • ½ cup dried cranberries chopped
  • ¼ cup walnuts chopped (optional)
  • 4 large flour tortillas
  • ¼ cup fresh parsley or spinach chopped (for garnish)

Instructions

  • In a mixing bowl, combine the softened cream cheese and crumbled feta cheese. Use a spoon or spatula to mix until smooth and creamy.
  • Stir in the chopped dried cranberries and walnuts (if using) into the cream cheese mixture until evenly distributed.
  • Lay one tortilla flat on a cutting board. Spread about ¼ of the cream cheese mixture evenly over the entire surface of the tortilla.
  • Roll the tortilla tightly, starting from one edge, into a log shape. Wrap the rolled tortilla in plastic wrap and repeat the process for the remaining tortillas.
  • Once all tortillas are rolled and wrapped, refrigerate them for at least 30 minutes to firm up.
  • After chilling, remove the pinwheels from plastic wrap and place them on a cutting board. Using a sharp knife, slice each rolled tortilla into 1-inch wide pinwheels.
  • Arrange the pinwheels on a platter and garnish with fresh parsley or spinach before serving.

Notes

For a colorful presentation, you can use flavored tortillas, such as spinach or sun-dried tomato.
These pinwheels can be made a day in advance; just store them in the refrigerator until ready to serve.
Feel free to customize the recipe by adding other ingredients like roasted red peppers or olives for different flavor profiles.
