Preheat your grill or smoker to 400°F (200°C). You want that hot surface ready for searing soon after.
Grab a big bowl and toss in your ground beef, shredded cheddar, sour cream, bacon crumbles, and ranch seasoning. Mix it gently but make sure it’s all combined good.
Divide that mixture into 6 equal parts. Shape each into a patty that’s thick enough to hold juiciness but still cook fast.
Place the patties on your hot grill or smoker grates. Let them cook about 5 to 7 minutes on each side. Don’t rush flipping ’em.
A couple minutes before you pull ’em off, lay a cheese slice on each patty so it melts just right. That gooey layer is where dreams start coming true.
While those cook, toss your brioche buns on the grill. Toast ’em ’til golden brown and slightly crispy on the edges.
Now assembly time. Spread that burger sauce on your bottom bun, lay down the cheesy, smoky patty, pile on caramelized onions and pickles. Cap it with the top bun and dive in.
