Equipment

  • 1 Pressure cooker

Ingredients

Main ingredients

  • 1 pound shrimp peeled and deveined – gotta be fresh or thawed well
  • 1 cup lump crab meat this adds real seafood punch
  • 1 cup queso fresco crumbled – creamy and mild, perfect for melting in
  • 1 teaspoon chili powder brings a little kick but not too much
  • ½ teaspoon garlic powder for just the right garlic touch
  • 12 corn tortillas pick ones that are pliable and fresh
  • 1 cup oil for frying you’re gonna need to crisp those taquitos up nice

Instructions

Instructions

  • First you mix shrimp, crab meat, queso fresco, chili powder, and garlic powder in a big bowl. You wanna make sure every bit gets coated well.
  • Warm tortillas in a dry skillet till they’re bendy, this stops cracking when you roll.
  • Put a spoonful of the seafood mix in each tortilla and roll them tight, you want that filling secure so it don’t leak out.
  • Heat your oil in a frying pan over medium heat. The cooker’s catching the flavors but frying adds that crispy charm you don’t wanna miss.
  • Fry your taquitos in batches, flipping them every 3-4 minutes until they’re golden brown and crispy on all sides.
  • Drain on paper towels once done to soak up extra oil then serve hot with your fav salsa for dipping. The way those crunchy shells crack open is just something else.

Notes

Serve with your favorite salsa for added flavor.
