Ingredients
  

  • 1 lb ground beef
  • 1 small onion, diced (1 cup)
  • 1 can corn, drained (15 oz)
  • 1 can cream of mushroom soup (10.5 oz)
  • 1 cup shredded cheddar cheese
  • 1 bag frozen tater tots (28 oz)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • chopped green onions for garnish (optional)

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, cook the ground beef and diced onion over medium heat until the meat is browned and onions are translucent, about 5-7 minutes. Drain excess fat.
  • Stir in the corn, cream of mushroom soup, garlic powder, paprika, salt, and pepper. Mix well until all ingredients are combined.
  • Transfer the meat mixture into a 9x13 inch baking dish and spread it evenly.
  • Top the meat mixture with frozen tater tots, placing them in a single layer.
  • Bake in the preheated oven for 25 minutes, or until the tater tots are golden and crispy.
  • Remove from oven and sprinkle shredded cheddar cheese on top. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let it cool for a few minutes. Garnish with chopped green onions if desired before serving.

Notes

You can customize this casserole by adding bell peppers, black beans, or jalapeños for extra flavor.
For a lighter version, consider using ground turkey or chicken instead of beef and low-fat cheese.
Leftovers can be stored in the refrigerator for up to 3 days. Reheat in the microwave or oven before serving.
