  • 8 ounces linguine noodles cooked al dente
  • 1 ½ pounds boneless skinless chicken breasts cut into 1-inch bites
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon paprika
  • 1 ½ teaspoons garlic salt ½ teaspoon for chicken, 1 teaspoon for sauce
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ cup cowboy butter divided
  • ¾ cup heavy cream

  • Cook linguine according to package instructions until al dente. Drain and set aside.
  • Heat olive oil in a large skillet over medium-high heat. Add chicken bites with paprika, ½ teaspoon garlic salt, kosher salt, and pepper. Cook for 6-8 minutes until browned and fully cooked. Remove and set aside.
  • Reduce heat to medium. Add 2 tablespoons of cowboy butter to skillet and melt.
  • Pour in heavy cream and stir in 1 teaspoon garlic salt. Let simmer 3-4 minutes until slightly thickened.
  • Add remaining 2 tablespoons of cowboy butter and stir until smooth.
  • Return chicken to skillet, toss to coat in sauce. Add linguine and stir to combine. Heat through and serve warm with lemon and parsley garnish if desired.

Notes

Garnish with lemon slices and parsley for brightness. Great for leftovers too!
