Ingredients
  

  • 1 cup cottage cheese
  • 1 cup all-purpose flour Try using whole-wheat flour for a healthier option.
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon olive oil
  • 1 large egg

Instructions
 

  • In a mixing bowl, combine the cottage cheese, all-purpose flour, baking powder, and salt. Mix until well combined.
  • Add the olive oil and the egg to the mixture. Stir until all ingredients are evenly incorporated.
  • If the dough seems too dry, add a little water, one tablespoon at a time, until it reaches a soft, pliable consistency.
  • Divide the dough into four equal portions and shape each portion into a ball.
  • Dust a clean surface with flour and roll out each ball into a flatbread shape, about ¼ inch thick.
  • Heat a non-stick skillet over medium heat. Place one flatbread in the skillet and cook for about 3-4 minutes or until bubbles form on the surface and the bottom is golden brown.
  • Flip the flatbread using a spatula and cook for another 2-3 minutes until golden brown on the other side.
  • Remove the flatbread from the skillet and keep warm. Repeat with the remaining portions of dough.
  • Serve warm and enjoy with your choice of dips, spreads, or toppings.

Notes

You can add herbs or spices to the dough for extra flavor.
These flatbreads can be stored in an airtight container in the refrigerator for up to 3 days.
