This Slow Cooker Corned Beef and Cabbage recipe packs all of the deliciousness of corned beef into a meal that cooks itself. Talk about a stroke of good fortune on St. Patrick’s Day or any day of the year!
Place the corned beef brisket into your slow cooker fat side up. Sprinkle the spice packet all over the brisket.
Add the onion, garlic slices, and bay leaves around the brisket.
Pour water over everything until the meat and veggies are just covered.
Layer the peeled and quartered potatoes on top of the brisket and spices.
Add the chopped carrots right on top of the potatoes.
Place the cabbage wedges on top of those carrots.
Cover your slow cooker and set it to low for 8 to 10 hours or high for 4 to 5 hours. When it’s done, carefully remove everything. Slice the brisket and plate with veggies.
Notes
Serve with some broth spooned over and enjoy. Substitute up to 2 cups of water with beer if desired.
