Preheat your oven to 375℉.
Season the chicken breasts with garlic powder and chicken bouillon on both sides. Let rest 15 minutes to reach room temp.
Heat olive oil in an oven-safe skillet over medium heat. Sear chicken ~4-5 minutes each side until golden brown.
Remove the chicken and set aside to rest. In same skillet, add butter, onions, and mushrooms. Sauté ~10 minutes until caramelized.
Deglaze skillet with white wine vinegar and return chicken to skillet. Top with mushrooms and onions.
Sprinkle monterey jack cheese over the chicken. Transfer skillet to oven and bake 15 minutes.
Remove from oven and let rest 5 minutes before serving.
Notes
To save time, use pre-sliced mushrooms and onions and pre-shredded cheese. You can use mozzarella or cheddar instead of monterey jack if desired.
