  • 3 boneless chicken breasts
  • 1 ¼ cup monterey jack cheese shredded
  • 1 whole onion sliced
  • 8 oz mushrooms sliced
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 teaspoon garlic powder to taste
  • 2 teaspoon chicken bouillon to taste
  • 1 tablespoon white wine vinegar

  • Preheat your oven to 375℉.
  • Season the chicken breasts with garlic powder and chicken bouillon on both sides. Let rest 15 minutes to reach room temp.
  • Heat olive oil in an oven-safe skillet over medium heat. Sear chicken ~4-5 minutes each side until golden brown.
  • Remove the chicken and set aside to rest. In same skillet, add butter, onions, and mushrooms. Sauté ~10 minutes until caramelized.
  • Deglaze skillet with white wine vinegar and return chicken to skillet. Top with mushrooms and onions.
  • Sprinkle monterey jack cheese over the chicken. Transfer skillet to oven and bake 15 minutes.
  • Remove from oven and let rest 5 minutes before serving.

Notes

To save time, use pre-sliced mushrooms and onions and pre-shredded cheese. You can use mozzarella or cheddar instead of monterey jack if desired.
