In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt until well mixed.
In a larger bowl, beat sugar, vegetable oil, eggs, and vanilla extract until smooth and creamy.
Slowly add dry ingredients to wet ingredients, mixing until just combined. Avoid overmixing.
Fold in grated zucchini and walnuts if using.
Pour batter into the greased pan and smooth the top.
Place pan in a pressure cooker setup with about an inch of water, seal and cook on high pressure for 30 minutes.
Let the pressure release naturally, then remove the lid, transfer cake to a wire rack and cool completely before slicing.
Notes
Make sure the zucchini is finely grated for best texture. Walnuts are optional but add great crunch for those who enjoy nuts.
