  • Preheat your oven to 350°F (175°C) and grease a 9-inch cake pan.
  • In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt until well mixed.
  • In a larger bowl, beat sugar, vegetable oil, eggs, and vanilla extract until smooth and creamy.
  • Slowly add dry ingredients to wet ingredients, mixing until just combined. Avoid overmixing.
  • Fold in grated zucchini and walnuts if using.
  • Pour batter into the greased pan and smooth the top.
  • Place pan in a pressure cooker setup with about an inch of water, seal and cook on high pressure for 30 minutes.
  • Let the pressure release naturally, then remove the lid, transfer cake to a wire rack and cool completely before slicing.

Notes

Make sure the zucchini is finely grated for best texture. Walnuts are optional but add great crunch for those who enjoy nuts.
