Chipotle Honey Chicken Thighs with Smoked Gouda Mashed Potatoes
This recipe brings together the sweet and smoky combo of chipotle honey with juicy chicken thighs, paired with creamy mashed potatoes featuring smoked gouda.
Start by preheating your oven to 400°F. Mix chicken thighs with chipotle honey, salt, and pepper in a bowl. Place 'em on a baking sheet and slap 'em in the oven for 25 to 30 minutes until they’re fully cooked and nicely caramelized.
While chicken is in, fill your pressure cooker with peeled and chopped potatoes. Cover with water, add a pinch of salt, and close the lid with the sealing ring set to seal. Set your cooker to high pressure. Let the pressure build, then cook for about 10 minutes.
When time’s up, do a quick release to let out the steam fast. Open the lid carefully. Drain the potatoes and pop them back into the pot.
