- 4 pieces boneless, skinless chicken breasts About 1.5 lbs total.
- 8 oz egg noodles
- ¼ cup unsalted butter ½ stick.
- 2 cups chicken broth
- 2 cloves garlic Minced.
- 1 teaspoon dried thyme
- to taste none salt
- to taste none pepper
- to garnish none fresh parsley Optional.
Bring a large pot of salted water to a boil. Once boiling, add the egg noodles and cook according to package instructions until al dente. Drain and set aside.
In a large skillet, melt 2 tablespoons of butter over medium-high heat. Season the chicken breasts with salt, pepper, and dried thyme.
Add the seasoned chicken to the skillet and cook for about 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside to keep warm.
In the same skillet, add the remaining butter and minced garlic. Sauté for about 1 minute until fragrant.
Pour in the chicken broth and bring the mixture to a simmer. Let it reduce slightly for about 3-4 minutes.
Add the cooked egg noodles to the skillet, stirring well to coat them in the buttery broth. Cook for an additional 2-3 minutes until heated through.
Slice the cooked chicken into strips and serve over the buttery noodles. Garnish with freshly chopped parsley if desired.
For added flavor, you can include vegetables such as peas or spinach in the noodles.
Store any leftovers in an airtight container in the refrigerator for up to 3 days.
This dish pairs well with a side salad or steamed vegetables for a complete meal.
