Heat olive oil in a large pot over medium heat.
Add chicken and cook until lightly browned. Remove from pot and set aside.
Add onions, carrots, and celery to pot. Cook until vegetables soften.
Add garlic, tomato paste, thyme, and rosemary. Stir and cook for 2 minutes.
Return chicken to the pot and pour in chicken broth. Stir to combine.
Add diced potatoes and bring to a boil.
Reduce heat, cover, and let simmer for 25-30 minutes until potatoes are tender.
Stir in frozen peas and cook for another 5 minutes.
Season with salt and pepper to taste. Serve hot.
Notes
For added flavor, try using freshly chopped herbs instead of dried.
