  • 1 lb rotini pasta cooked and drained
  • 2 boneless skinless chicken breasts fully cooked and diced
  • 2 stalks celery chopped
  • 4 hard boiled eggs halved
  • cup red onion chopped
  • cup fresh parsley chopped
  • ¾ to 1 cup Hellmann's mayo creamy for dressing
  • ½ cup whole milk to thin the mayo
  • 1 lemon juiced
  • Salt and pepper to taste

  • Start by cooking your rotini pasta on the stove following package instructions. Drain it and set aside to cool while you prep other stuff.
  • Dice your already cooked chicken breasts into small chunks. This makes every forkful just right.
  • Chop celery stalks, dice red onion, and chop parsley. You want all these ready before mixing.
  • Peel your hard boiled eggs and cut them in half. These get tossed in later to keep their shape.
  • In a big bowl, combine the pasta, chicken, celery, eggs, onion, and parsley. This is the base of your salad.
  • In a separate bowl, whisk together Hellmann’s mayo, whole milk, lemon juice, salt, and pepper to make your dressing.
  • Pour the dressing over the pasta mix and stir gently till everything’s coated evenly. You wanna be careful so eggs stay halfed nice.
  • Chill the salad in the fridge at least 30 minutes. This rest lets flavors mingle and settle real good before you dig in.
