Preheat your oven to 400 degrees Fahrenheit. You gotta have it hot and ready for those kebabs to brown beautifully.
Toss onion, parsley, and garlic in your food processor. Pulse it a few times until it’s chopped just right. No big chunks, please.
In a big bowl, mix your ground chicken with breadcrumbs, coriander, allspice, cumin, cardamom, salt, and pepper. Then dump in that chopped onion mixture and blend everything until it’s all cozy together.
Take your mixture and form sausage-shaped koftas around 2 or 3 inches long. No need to be perfect, just make ‘em look like kebabs.
Line a baking sheet with parchment and lay those kebabs out. Give them space so they cook evenly.
Pop the kebabs in your hot oven and bake for about 25 to 30 minutes. You’re looking for those edges to get lightly browned and the chicken cooked through.
While they bake, mix up your garlicky yogurt sauce. Stir together yogurt, minced garlic, lemon zest, juice, parsley, salt, and pepper. Taste it and adjust if you want more zing.
When kebabs are done, serve em warm with that garlicky yogurt sauce on the side. It’s dang delicious and compliments the spiced chicken so well.
