Cut your chicken breast into small cubes and place them in a bowl.
Add 1 ½ tablespoons olive oil, lemon juice, paprika, cumin, garlic, and salt. Mix until coated.
Cover and refrigerate for at least 30 minutes or up to 2 hours to marinate.
Preheat grill or grill pan to medium-high heat and brush with 2 tablespoons olive oil.
Thread marinated chicken onto skewers, spacing evenly.
Grill for 10–12 minutes, rotating to char each side then remove from heat.
Sprinkle with chopped parsley and serve immediately.
Notes
For best results, soak wooden skewers in water before grilling. Store leftovers refrigerated for 3-4 days or freeze up to 3 months.
