In a bowl, mix olive oil, chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper. Add the chicken breast and coat evenly. Let it marinate for at least 10 minutes.
While the chicken marinates, cook the rice according to package instructions.
Heat a large skillet over medium-high heat. Add the marinated chicken and cook for about 6-7 minutes on each side, or until cooked through and no longer pink in the center. Remove the chicken from the skillet and let it rest for a few minutes before slicing.
In the same skillet, add sliced bell peppers and onions. Sauté for about 5-6 minutes or until they become tender.
Slice the cooked chicken and add it back to the skillet with the peppers and onions, mixing well.
To assemble the bowls, start with a base of cooked rice, then top with the chicken and vegetable mixture, black beans, corn, cheese, salsa, and sliced avocado.
Garnish with fresh cilantro and serve with lime wedges on the side.
