Ingredients
  

  • 1 pound boneless, skinless chicken breast
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • to taste salt and pepper
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cups cooked rice (white, brown, or cauliflower rice)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (canned or frozen)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • 1 avocado, sliced
  • fresh cilantro for garnish
  • lime wedges for serving

Instructions
 

  • In a bowl, mix olive oil, chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper. Add the chicken breast and coat evenly. Let it marinate for at least 10 minutes.
  • While the chicken marinates, cook the rice according to package instructions.
  • Heat a large skillet over medium-high heat. Add the marinated chicken and cook for about 6-7 minutes on each side, or until cooked through and no longer pink in the center. Remove the chicken from the skillet and let it rest for a few minutes before slicing.
  • In the same skillet, add sliced bell peppers and onions. Sauté for about 5-6 minutes or until they become tender.
  • Slice the cooked chicken and add it back to the skillet with the peppers and onions, mixing well.
  • To assemble the bowls, start with a base of cooked rice, then top with the chicken and vegetable mixture, black beans, corn, cheese, salsa, and sliced avocado.
  • Garnish with fresh cilantro and serve with lime wedges on the side.

Notes

You can customize the ingredients by adding or removing any toppings, such as sour cream, jalapeños, or lettuce.
This dish is great for meal prepping; store in airtight containers in the refrigerator for up to 4 days.
Feel free to use cooked chicken to save time if desired.
