Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium carrot, diced
  • 1 stalk celery, diced
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded You can use rotisserie chicken for convenience.
  • 1 cup diced ham
  • 1 cup heavy cream For a lighter version, substitute half-and-half.
  • 1 cup shredded Swiss cheese You can use reduced-fat cheese for a lighter version.
  • 1 teaspoon Dijon mustard
  • to taste salt
  • to taste pepper
  • 1 tablespoon chopped fresh parsley For garnish.

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5 minutes, until the vegetables are softened.
  • Add the minced garlic and sauté for an additional minute until fragrant.
  • Pour in the chicken broth and bring to a simmer. Let it cook for approximately 10 minutes.
  • Stir in the shredded chicken, diced ham, heavy cream, Swiss cheese, and Dijon mustard. Mix well until the cheese is melted and the soup is creamy.
  • Season with salt and pepper to taste. Allow the soup to simmer for another 10 minutes, stirring occasionally.
  • Serve hot, garnished with chopped fresh parsley.

Notes

You can use rotisserie chicken for convenience.
Feel free to add vegetables like peas or corn for extra nutrition.
For a lighter version, you can substitute half-and-half for heavy cream and use reduced-fat cheese.
