  • 8 ounces uncooked pasta I used fusilli
  • 3 packed cups shredded chicken 12 ounces cooked, about 1 pound raw
  • 3 cups chopped romaine lettuce Fresh and crunchy is key
  • ½ cup shredded parmesan cheese Adds that salty kick
  • 1 ¼ cup Caesar dressing homemade or store-bought
  • 1 to 2 tablespoons lemon juice This brightens everything up nicely
  • Salt and pepper to taste

  • Boil or pressure cook the pasta as per package instructions. Once done, drain and set aside to cool a bit. You don’t want it hot when you toss with the lettuce.
  • Use cooked shredded chicken. If you wanna pressure cook the chicken, do a tender pull test after cooking, whether by steam or manual quick release.
  • In a big bowl, stir together pasta, shredded chicken, chopped romaine, and shredded parmesan.
  • Pour Caesar dressing over everything and drizzle lemon juice. Toss everything well till salad’s coated evenly.
  • Add salt and pepper to your liking. Taste as you go; it’s easy to adjust.
  • You can serve immediately for a fresh crunch or refrigerate 1-2 hours to let flavors meld. Both ways work heck good.
