Ingredients
  

  • 4 pieces boneless, skinless chicken breasts About 1.5 lbs.
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup chicken broth
  • 1 piece lemon, juiced Juice of 1 lemon.

Instructions
 

  • Begin by seasoning the chicken breasts. In a small bowl, combine the minced garlic, dried thyme, dried rosemary, salt, and black pepper. Rub this mixture evenly over both sides of the chicken breasts.
  • Heat the olive oil in a skillet over medium heat and sear the chicken breasts for about 2-3 minutes on each side until browned. This step is optional but adds extra flavor.
  • Place the chicken breasts in the slow cooker. Pour the chicken broth and lemon juice over the chicken.
  • Cover the slow cooker with the lid and set it to low heat. Cook for 6 hours, or until the chicken is cooked through and tender, reaching an internal temperature of 165°F.
  • Once done, remove the chicken from the slow cooker and let it rest for a few minutes before slicing.
  • Serve with your choice of vegetables, rice, or salad.

Store any leftovers in an airtight container in the refrigerator for up to 3 days.
