Start by seasoning the chicken breasts. In a mixing bowl, combine minced garlic, dried Italian herbs, salt, and black pepper. Rub this mixture evenly onto both sides of each chicken breast.
Set the Instant Pot to 'Sauté' mode and allow it to heat. Once hot, add the olive oil.
Place the seasoned chicken breasts in the pot and sear for 3-4 minutes on each side until golden brown. Remove the chicken and set aside.
Pour chicken broth and lemon juice into the pot, scraping any browned bits from the bottom to deglaze the pot.
Return the chicken breasts to the Instant Pot, ensuring they're submerged in the broth.
Secure the lid of the Instant Pot and set it to 'Manual' or 'Pressure Cook' mode for 10 minutes at high pressure.
After the cooking time is complete, allow the pressure to release naturally for 5 minutes, then perform a quick release for any remaining pressure.
Carefully open the lid and check the internal temperature of the chicken. It should reach 165°F (75°C). If not, you can cook for an additional 2-3 minutes under pressure.
Once done, remove the chicken from the pot and let it rest for a few minutes. Slice if desired and serve with the cooking juices drizzled on top. Garnish with fresh parsley if using.
