Ingredients
  

  • 3 cups cooked chicken breast, shredded You can use leftover rotisserie chicken to save time.
  • 1 cup sliced mushrooms
  • 1 cup broccoli florets Feel free to customize the vegetables based on preference.
  • 1 cup cooked rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup shredded cheddar cheese
  • ½ cup milk
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • 1 cup bread crumbs Optional, for topping.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, combine the sliced mushrooms and broccoli florets. Sauté for about 5 minutes until slightly tender.
  • In a large mixing bowl, combine the shredded chicken, cooked rice, sautéed vegetables, cream of chicken soup, milk, garlic powder, onion powder, black pepper, and salt. Mix well until all ingredients are evenly combined.
  • Transfer the mixture to a 9x13-inch baking dish, spreading it out evenly.
  • If using, sprinkle the breadcrumbs on top of the casserole for added crunch.
  • Top the casserole with shredded cheddar cheese.
  • Bake in the preheated oven for 30-35 minutes, or until the cheese is bubbly and golden brown.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes

You can customize the vegetables based on your preference; bell peppers or green beans work well too.
Feel free to use leftover rotisserie chicken to save time on cooking the chicken.
This casserole can be made ahead of time and stored in the refrigerator. Just bake it when you're ready to serve!
