- 2 cups cooked chicken breast, shredded Use grilled or sautéed seasoned chicken.
- 1 ripe avocado, mashed
- 1 cup cherry tomatoes, halved
- 1 cup lettuce, shredded
- ¼ cup red onion, thinly sliced
- 4 whole wheat tortillas (10-inch)
- ¼ cup Greek yogurt or mayonnaise
- 1 tablespoon lime juice
- to taste salt
- to taste pepper
In a mixing bowl, combine the mashed avocado, Greek yogurt (or mayonnaise), lime juice, salt, and pepper. Mix until smooth.
If using leftover chicken, ensure it’s shredded. If cooking fresh chicken, grill or sauté seasoned chicken breasts in a skillet over medium heat until cooked through, about 10 minutes. Let it cool and then shred.
Take a tortilla and spread a layer of the avocado mixture evenly over the surface.
Top with shredded chicken, cherry tomatoes, lettuce, and red onion.
Fold the sides of the tortilla inward, then roll it up tightly from the bottom.
Repeat steps 3 to 5 for the remaining tortillas.
Slice the wraps in half diagonally and serve immediately or wrap in parchment paper for on-the-go enjoyment.
Add cheese, such as feta or shredded cheddar, for extra flavor.
If you prefer, you can substitute grilled vegetables for chicken for a vegetarian option.
Store any leftover avocado spread in an airtight container to prevent browning.
