Ingredients
  

  • 1 pound ground beef
  • 1 cup uncooked long-grain white rice
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 cup chopped onion about 1 medium onion
  • 1 cup diced tomatoes with juice, can be canned or fresh
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 cup frozen peas

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, brown the ground beef over medium heat. Cook until fully browned, breaking it up with a spoon as it cooks.
  • Add the chopped onion to the skillet and cook until the onion is translucent, about 5 minutes.
  • Stir in the garlic powder, onion powder, salt, black pepper, and paprika. Mix well.
  • Add the uncooked rice, beef broth, and diced tomatoes to the beef mixture. Stir until well combined.
  • Bring the mixture to a simmer and cook for about 5 minutes, allowing some of the liquid to absorb.
  • Fold in the frozen peas, then transfer the mixture to a greased 9x13 inch casserole dish.
  • Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
  • Cover the casserole dish with aluminum foil and bake in the preheated oven for 20 minutes.
  • Remove the foil and bake for an additional 10 minutes, or until cheese is bubbly and golden.

Notes

You can customize the vegetables by adding bell peppers, corn, or other favorites.
For extra flavor, consider adding Worcestershire sauce or hot sauce to the beef mixture.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven before serving.
