Ingredients
  

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 medium potatoes, peeled and diced (about 4 cups)
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 tablespoon olive oil
  • to taste chopped green onions or parsley for garnish, optional

Instructions
 

  • In a large pot or Dutch oven, heat olive oil over medium heat.
  • Add the ground beef to the pot and cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain any excess grease.
  • Add the chopped onion and minced garlic to the pot. Sauté until the onion is translucent, about 3-4 minutes.
  • Stir in the diced potatoes, chicken broth, salt, black pepper, and paprika. Bring the mixture to a boil.
  • Reduce heat to a simmer and cover the pot. Let it cook for about 15-20 minutes, or until the potatoes are tender.
  • Once the potatoes are cooked, stir in the milk and shredded cheddar cheese until the cheese is melted and the soup is creamy.
  • Taste and adjust seasoning if necessary.
  • Serve hot, garnished with chopped green onions or parsley if desired.

Notes

For a thicker soup, you can mash some of the potatoes with a fork before adding the cheese.
This soup keeps well in the refrigerator for up to 3 days and can be reheated on the stovetop.
