  • 0.5 tablespoon olive oil
  • 1 pound extra lean ground beef
  • 1 teaspoon chili powder
  • 1 teaspoon ground chipotle chili pepper
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.25 teaspoon ground cayenne pepper
  • 1 tablespoon tomato paste
  • 2 tablespoon unsalted beef stock or broth
  • 12 ounces shredded cheese blend cheddar, Monterey Jack, and mozzarella
  • 6 flour tortillas tortillas 7 to 8 inches across
  • 2 tablespoons vegetable oil to grease the skillet
  • optional Salsa, guacamole, and sour cream for serving

Instructions

  • Heat olive oil in your pressure cooker using the sauté function or in a skillet.
  • Add ground beef. Break it up with a wooden spoon or spatula and let it brown, 5 to 7 minutes.
  • Sprinkle on chili powder, chipotle, oregano, cumin, garlic and onion powders, salt, pepper, and cayenne. Stir and cook 3 to 5 minutes.
  • Add tomato paste and beef broth, stir. Secure lid and set on high pressure for 5 minutes. Natural release for 10 minutes.
  • While cooking, heat a skillet over medium-high. Once natural release done, quick release any pressure, open lid.
  • Spread beef on tortilla, sprinkle cheese, cover with another tortilla. Cook in greased skillet 2 to 3 minutes each side.
  • Cut into wedges and serve.

Notes

Great served with salsa, guacamole, and sour cream.
