This Cheesy Broccoli Rice Vegan Casserole is the ultimate comfort food! It combines vegan chicken (or chickpeas) with rice, broccoli, and dairy-free cheese in one skillet and is ready to eat in just 30 minutes.
Start by heating the olive oil in your pressure cooker using the sauté setting. Toss in the vegan chicken pieces and cook until they get a little golden, about 3-4 minutes.
Add the minced garlic and cook for just about a minute until the aroma wakes you up. That garlic scent is a good steam cue!
Pour in the rinsed rice, vegetable broth, and vegan cream. Give it a stir then lock the lid and cook on high pressure for 12 minutes. This locks flavors deep and cooks rice right.
Once the cooking time ends, do a quick release to lower the pressure safely. Open the lid and stir in the broccoli florets.
If it looks dry, add about a cup more broth or even water. Cover again and set it on simmer or low heat for about 8 minutes so the broccoli gets tender without getting mushy.
Uncover and mix in 1 cup of the vegan cheese until melty. Then sprinkle the rest of the cheese on top and pop the lid back on just long enough on low heat to melt that cheesy topping.
Finally, taste and add salt if needed. Let it sit a minute or two before serving so all those steam cues settle. Ready to serve up a warm, cheesy, plant-based hug.
