Preheat the oven to 400°F and wash, chop your potatoes into fries. Toss with olive oil, salt, pepper, and garlic powder and spread on a baking sheet. Bake for 25-30 minutes.
Heat a skillet over medium and brown ground beef, breaking it up. Drain fat, then add salt, pepper, chili powder, cumin, dried cilantro, and paprika.
Pour in half cup of water, mix in minced garlic, simmer everything for 5-10 minutes.
Warm tortillas in a dry skillet or microwave until soft.
Grab each tortilla, scoop beef mixture, add nacho cheese, roll tight. Serve with crispy potato wedges.
