Preheat your oven to 425 degrees Fahrenheit.
Mix dry ingredients in a large bowl – flour, salt, brown sugar, and yeast.
Add the warm water slowly and stir until it forms a sticky dough. Knead on a floured surface for about 5 minutes until smooth and soft.
Let the dough rest and rise for 10 minutes, while you bring 2 cups of water to a boil and add the baking soda.
Divide the dough into 8 pieces and roll each into a long rope. Wrap each rope around a hot dog fully.
Dunk each wrapped dog into the boiling baking soda water for 30 seconds, then place on a parchment-lined baking sheet.
Sprinkle shredded cheddar cheese on top of each pretzel dog.
Bake for 20 to 25 minutes or until the pretzel dogs are golden and melty.
Brush with melted butter and sprinkle with coarse salt for serving.
Notes
Serve warm with mustard if desired. Wrap leftovers in foil or plastic wrap for storage.
