  • 6 strips Bacon for smoky crunch
  • 2 large heads Broccoli fresh and firm
  • Kosher salt and black pepper to taste
  • ½ cup Pecan halves for crunch and nutty touch
  • ¼ cup Honey sweet base of dressing
  • 1 clove Garlic crushed for punch in dressing
  • 2 Dried chile de arbol peppers for heat
  • ¼ cup Apple cider vinegar
  • ¼ cup Extra virgin olive oil for smooth balance
  • ½ cup Dried cranberries for sweetness
  • 4 ounces Goat or blue cheese crumbled for creamy contrast
  • ¼ cup Red onion thinly sliced

  • Preheat your oven to 400°F. You want it hot so the broccoli gets that perfect char without getting all mushy.
  • Cut your broccoli into florets. Toss them on a baking sheet and drizzle with olive oil, sprinkle salt and pepper. Make sure they’re coated well.
  • Roast broccoli in the oven for about 15-20 minutes. Keep an eye to ensure it’s charred but still tender.
  • While broccoli’s roasting, cook bacon strips in a skillet over medium heat till crispy. Drain on paper towels.
  • In the same skillet, add crushed garlic and dried chile peppers. Sauté for just 1-2 minutes to release flavors.
  • Stir in honey, apple cider vinegar, and season with salt and pepper. Let dressing warm through while you prep the rest.
  • In a large bowl, combine roasted broccoli, crumbled bacon, pecans, and dried cranberries. Drizzle hot honey dressing and toss well. Serve warm or at room temp.

Notes

Serve warm with sauce of choice. Make the hot honey dressing ahead and store in fridge. Just warm it up quick before tossing with your salad.
